Before packaging specifications are written. The reformulated product color needs to be characterized, including batch variation and shelf-life behavior, before any downstream asset is updated. Teams that begin packaging work in parallel with R&D typically discover misalignment after tooling is locked, which is the most expensive point of discovery in the system.
What makes natural colorant color harder to specify than synthetic dye color?
Natural colorants are less stable under heat, light, and pH variation than synthetic dyes, and their behavior is highly dependent on the specific application and other ingredients in the formulation. They also exhibit greater batch-to-batch variation. A target color value derived from an early R&D sample may not represent the range the production line will actually produce. The specification needs to account for that range, not just the ideal.
